No waste - make and use exactly what you need. Bain marie stable. Tailor your gravy to complement the dish. Here's a few ideas: Beef - for a creamy peppercorn sauce stir in some cracked black pepper and a touch of double cream. Pork - stir in a spoonful of honey and mustard.
